Love this chocolate pudding made by my mom. She got this recipe from the cookbook she bought; Delicious Dessert Book. I would just like to share to you the recipe and perhaps you may want to try this at home. Here's how you can make your very own Chocolate Pudding:
Ingredients:
4 oz butter
2 oz. castor sugar
2 oz. brown sugar ( packed) or
1 oz. unsweetened cooking chocolate
1 egg
1 tbsp. vanilla
1/2 tsp salt
1/2 tsp baking powder
1 lb. cream
2 oz. icing sugar
Procedure:
Cream the butter, gradually add castor and brown sugar, and keep beating. Break one egg and beat well. Add cooled melted chocolate. Sift mixture , salt and baking powder 3 times, gently folding mixture. Add vanilla and mix well with your hand. Mould it into a thin smooth long roll keeping the diameter about 2 1/2 ( or the diameter should be the size of the cookie required. Fold it in wax paper, twist the ends to hold the shape. Chill overnight or for several hours til it is firm. Do not put in the deep freeze. When required cut into thin slices and set it to bake in a preheated oven on an ungreased tray, at 400 degrees for 6-8 minutes or till it is slightly browned. Cool and store in a clean jar with a loose cover to ensure crispness. For the filling, add 2 oz. icing sugar to the cream and beat it on ice till thick. Next pour a spoonful of the cream filling on a cookie, place a cookie over this. Make a pile of 5 or 6 cookies or more. Lay the piles crosswise on flat dish. Cover with the remaining whipped cream until the cookies are all covered with it. Decorate with walnut halves or quarters. Chill for at least 6 hours. If preferred, offer a chocolate sauce with it and serve cold by cutting the pudding into slices, which gives it a nice stripe effect.
Chocolate Sauce:
1/2 lb. cooking chocolate
2 oz. or 1/4 cup water
2 oz. sugar
2 oz. cream
Melt the grated chocolate and sugar with water in a hot water till all the sugar is dissolved. Serve hot or cold mixing the cream before serving. Do not make this pudding in very hot weather and if you do then before cutting the dough, put it in the deep-freeze for a little while.
